The versatility of crab

A friend and I were talking recently about our favorite crab recipes. She said she loved Alaskan king crab legs, and would gladly pay the extra money to have them once in a while. But for more practical recipes like crab salads or crab cakes, less expensive varieties worked just fine. I told her about a recipe I had for Caribbean crab salad with lime juice and orange marmalade, and she told me about a creamy dip she makes with crab and artichoke. She works in a fancy restaurant and she said they are always trying out new crab recipes, since they prepare a lot of seafood there and certain kinds of seafood are somewhat interchangeable in recipes.
